Ingredients:

  • 8 oz pasta (fettuccine or penne)
  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup fresh basil, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • Zest of 1 lemon
  • Salt and pepper, to taste

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let rest before slicing.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  5. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and allow it to melt, creating a creamy sauce.
  6. Add the chopped basil, sun-dried tomatoes, and lemon zest to the sauce. Stir well to combine.
  7. Add the cooked pasta to the skillet and toss until well coated in the sauce.
  8. Slice the chicken and serve it on top of the pasta. Garnish with additional basil and Parmesan if desired.
