Ingredients:

  • 8 oz pasta (penne or fusilli)
  • 1 medium head of cauliflower, chopped
  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large pot, bring water to a boil and add the chopped cauliflower. Cook until tender, about 8-10 minutes. Drain and set aside.
  3. In the same pot, heat olive oil over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 6-8 minutes. Remove the chicken and set aside.
  4. In the same pot, add minced garlic and sauté for about 1 minute until fragrant. Add the cooked cauliflower, chicken broth, and heavy cream. Blend until smooth using an immersion blender or a regular blender.
  5. Return the chicken to the pot and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  6. Add the cooked pasta to the sauce and toss to combine. Serve hot, garnished with fresh parsley.
