Ingredients:

  • 2 boneless chicken breasts
  • 1 medium head of cauliflower, chopped
  • 2 cups chicken broth
  • 1 cup pasta (your choice)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • Parmesan cheese, grated (optional)

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped cauliflower and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until the cauliflower is tender, about 10-15 minutes.
  4. Remove the pot from heat and blend the cauliflower mixture until smooth using an immersion blender or a stand blender.
  5. In a separate skillet, season the chicken breasts with salt, pepper, and dried herbs. Cook over medium heat until golden brown and cooked through, about 6-7 minutes per side. Remove and slice.
  6. Combine the pasta with the creamy cauliflower sauce, stirring to coat evenly. Adjust seasoning if needed.
  7. Serve the pasta topped with sliced chicken, a sprinkle of fresh parsley, and grated Parmesan cheese if desired.
