Ingredients:

  • 2 cups instant rice
  • 2 cups chicken soup (low sodium)
  • 1 pound chicken breast, diced
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced chicken breast, season with garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  2. Add the asparagus pieces to the skillet and sauté for 3-4 minutes until they are bright green and tender-crisp.
  3. Pour in the chicken soup and bring to a simmer. Let it cook for another 5 minutes to allow flavors to combine.
  4. While the soup mixture is simmering, prepare the instant rice according to package instructions.
  5. Once the rice is ready, serve it in bowls and ladle the chicken and asparagus mixture over it. Garnish with fresh parsley if desired.
