Ingredients:

  • 1 cup quinoa
  • 2 cups water or chicken broth
  • 2 grilled chicken breasts, sliced
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or canned)
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon cumin

Instructions:

  1. Rinse the quinoa under cold water, then combine it with water or chicken broth in a medium saucepan. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes or until the quinoa is fluffy and liquid is absorbed.
