Ingredients:

  • 2 chicken breasts, sliced
  • 2 cups broccoli florets
  • 1 bell pepper, sliced (any color)
  • 8 oz pasta (e.g., penne or fusilli)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced chicken and cook until golden brown and cooked through, about 5-7 minutes. Season with salt and pepper.
  3. Add the minced garlic and sliced bell pepper to the skillet. Sauté for 2-3 minutes until the bell peppers are tender.
  4. Stir in the broccoli florets and cook for another 2-3 minutes until they are bright green and slightly tender.
  5. Reduce the heat to low and pour in the heavy cream, stirring to combine. Allow it to simmer for a couple of minutes until slightly thickened.
  6. Add the grated Parmesan cheese, basil, and thyme. Stir until the cheese is melted and the sauce is creamy. Adjust seasoning with salt and pepper as needed.
  7. Add the cooked pasta to the skillet and toss to coat in the sauce. Serve immediately, garnished with additional basil if desired.
