Ingredients:

  • 8 oz pasta (penne or fettuccine)
  • 1 lb chicken breast, diced
  • 2 cups broccoli florets
  • 1 bell pepper (red or yellow), sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 tsp Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, heat the olive oil. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and sliced bell pepper. Sauté until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  4. Add the broccoli florets to the skillet and pour in a splash of water. Cover and steam for about 3-4 minutes until the broccoli is bright green and tender-crisp.
  5. Return the cooked chicken to the skillet, then pour in the heavy cream and stir to combine. Allow the mixture to simmer for 2-3 minutes, then stir in the grated Parmesan cheese until melted and creamy.
  6. Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce. Adjust seasoning with more salt and pepper if needed.
  7. Serve warm, garnished with fresh parsley.
