Ingredients:

  • 8 oz fettuccine pasta
  • 1 lb boneless, skinless chicken breasts, sliced
  • 8 oz mushrooms, sliced (such as cremini or button)
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced chicken and season with salt, pepper, and dried thyme. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced mushrooms and cook until they release their moisture and become golden brown, about 5 minutes. Add minced garlic and sauté for an additional minute until fragrant.
