Ingredients:

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced (such as cremini or button)
  • 1 cup carrots, sliced
  • 1 cup celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup dry white wine (optional)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken and set aside.
  2. In the same pot, add the onion and garlic, sautéing until the onion is translucent.
  3. Add the mushrooms, carrots, and celery, cooking for about 5 minutes until the vegetables are softened.
  4. Stir in the thyme and rosemary, followed by the white wine. Let it simmer for 2-3 minutes to reduce slightly.
  5. Return the browned chicken to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  6. Stir in the heavy cream, and season with salt and pepper to taste. Allow to simmer for an additional 5 minutes until warmed through.
  7. Serve hot, garnished with fresh parsley.
