Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup fresh or frozen peas
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 cup chicken stock
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  2. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken stock and bring to a simmer.
  3. Stir in the heavy cream and let it simmer for 3-4 minutes until it thickens slightly. Add the peas and cook for an additional 2 minutes.
  4. Return the cooked chicken to the skillet, coating it in the creamy sauce. Sprinkle the mozzarella cheese over the chicken and cover the skillet until the cheese melts, about 2-3 minutes.
  5. Sprinkle the grated parmesan cheese on top and garnish with fresh parsley before serving. Enjoy with a side of crusty bread or over pasta for a complete meal.
