Ingredients:

  • 2 cups potato noodles
  • 1 lb chicken breast, diced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook until they are caramelized, about 10 minutes.
  3. Add minced garlic to the skillet and sauté for another 1-2 minutes until fragrant.
  4. In a separate pot, cook the potato noodles according to package instructions until al dente. Drain and set aside.
  5. In the skillet with the onions and garlic, add the diced chicken, thyme, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  6. Stir in the chicken broth and heavy cream, and bring to a simmer. Allow it to cook for an additional 3-4 minutes until slightly thickened.
  7. In a large baking dish, combine the cooked potato noodles with the chicken and sauce mixture. Mix well to combine.
  8. Top with shredded cheese and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for a few minutes before serving.
