Ingredients:

  • 1 lb chicken breast, diced
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 cup frozen peas
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Set the Instant Pot to sauté mode. Add olive oil and sauté the chopped onion until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the diced chicken breast to the pot and season with salt, pepper, and dried thyme. Cook for 3-5 minutes until the chicken is lightly browned.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the pot.
  5. Stir in the cream of chicken soup and rice, mixing well until combined.
  6. Close the lid of the Instant Pot and set it to pressure cook on high for 8 minutes.
  7. Once the cooking time is complete, allow for a natural release for 5 minutes, then perform a quick release for any remaining pressure.
  8. Open the lid and stir in the frozen peas. Let it sit for a few minutes to allow the peas to heat through.
  9. Serve hot, garnished with fresh herbs if desired.
