Ingredients:

  • 1 pound chicken breast, diced
  • 1 cup rice (white or long-grain)
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 cup frozen peas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions:

  1. Set the Instant Pot to sauté mode. Add olive oil and allow it to heat up.
  2. Add the diced chicken breast to the pot and season with salt, pepper, garlic powder, and onion powder. Sauté for about 3-4 minutes until the chicken is lightly browned.
  3. Pour in the chicken broth and scrape any browned bits from the bottom of the pot.
  4. Add the rice and cream of chicken soup, stirring to combine. Ensure the rice is submerged in the liquid.
  5. Close the lid of the Instant Pot and set it to manual high pressure for 10 minutes.
  6. Once the cooking time is complete, allow for a natural pressure release for 5 minutes, then perform a quick release for any remaining pressure.
  7. Open the lid, stir in the frozen peas, and let it sit for an additional 5 minutes to heat the peas through.
  8. Serve warm, garnished with fresh parsley if desired.
