Ingredients:

  • 2 cups chicken breast, diced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup carrots, sliced
  • 1 leek, cleaned and sliced
  • 1 cup broccolini, trimmed
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes.
