Ingredients:

  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 1 lb chicken breast, diced
  • 1 medium onion, chopped
  • 2 cups shredded cheese (e.g., cheddar or mozzarella)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, bring salted water to a boil and cook the orzo according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
  4. Add the diced chicken to the skillet and cook until browned and cooked through, about 7-8 minutes. Add minced garlic and cook for an additional minute.
  5. Stir in the broccoli florets and cook for another 3-4 minutes until they are bright green and tender.
  6. In a large mixing bowl, combine the cooked orzo, chicken and broccoli mixture, chicken broth, heavy cream, Italian seasoning, salt, pepper, and half of the cheese. Mix well.
  7. Transfer the mixture to a greased baking dish and top with the remaining cheese and red pepper flakes if using.
  8. Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
  9. Let it cool for a few minutes before garnishing with fresh parsley and serving.
