Ingredients:

  • 2 boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 12 oz egg noodles
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (for topping)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Cook the egg noodles according to the package instructions until al dente. Drain and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the chicken breasts to the skillet, season with salt, pepper, and Italian herbs, and cook until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove from heat and let cool slightly, then shred the chicken.
  5. In a large mixing bowl, combine the softened cream cheese, chicken broth, shredded chicken, cooked noodles, and half of the mozzarella cheese. Mix until well combined.
  6. Transfer the mixture to a greased baking dish. Top with the remaining mozzarella cheese and the grated Parmesan cheese.
  7. In a small bowl, mix the breadcrumbs with a drizzle of olive oil, then sprinkle over the cheese layer.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  9. Remove from the oven, let cool for a few minutes, and garnish with chopped parsley before serving.
