Ingredients:

  • 2 chicken breasts, diced
  • 8 oz egg noodles
  • 4 cups chicken broth
  • 1 large onion, diced
  • 2 medium potatoes, cubed
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional, for topping)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, bring the chicken broth to a boil and add the egg noodles. Cook according to package instructions until al dente, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  4. Add the diced chicken breasts to the skillet and cook until browned and cooked through, about 7-10 minutes. Season with garlic powder, thyme, salt, and pepper.
  5. In a separate pot, boil the cubed potatoes until tender, about 10 minutes. Drain and set aside.
  6. In a large mixing bowl, combine the cooked noodles, chicken mixture, boiled potatoes, and heavy cream. Mix well until everything is evenly coated.
  7. Transfer the mixture to a greased 9x13 inch baking dish. If desired, sprinkle shredded cheese on top.
  8. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbling and the cheese is melted and golden.
  9. Let cool for a few minutes before serving.
