Ingredients:

  • 2 cups cooked chicken, shredded
  • 8 oz egg noodles
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or a blend)
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Cook the egg noodles according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  4. Add the mixed vegetables to the skillet and cook for 3-4 minutes until they are tender.
  5. In a large mixing bowl, combine the shredded chicken, cooked noodles, sautéed vegetables, sour cream, chicken broth, thyme, paprika, black pepper, and salt. Mix well until everything is evenly coated.
  6. Transfer the mixture into a greased baking dish. Top with shredded cheese.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Garnish with fresh parsley before serving.
