Ingredients:

  • 2 chicken breasts, boneless and skinless
  • 1 medium onion, diced
  • 2 stalks of celery, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and garlic powder. Add them to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the diced onion and celery. Sauté for about 5 minutes, or until softened.
  4. Add the cherry tomatoes to the skillet and cook for an additional 3-4 minutes until they start to soften.
  5. Reduce the heat to low and stir in the heavy cream, mixing well. Allow the sauce to simmer for 2-3 minutes until slightly thickened.
  6. Add the fresh spinach and stir until wilted, about 2 minutes.
  7. Slice the cooked chicken and return it to the skillet, mixing it with the creamy sauce. Let everything heat through for another minute.
  8. Garnish with fresh basil, if desired, and serve hot.
