Ingredients:

  • 1 lb chicken breast, cubed
  • 1 tablespoon taco seasoning
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing until soft, about 5 minutes.
  2. Add the cubed chicken breast and taco seasoning to the pot, stirring to coat the chicken evenly. Cook until the chicken is no longer pink, about 5-7 minutes.
