Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 1 cup mushrooms, sliced
  • 1 can cream of chicken soup
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons capers, rinsed
  • 8 oz pasta (your choice)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken thighs with salt and pepper, then add them to the skillet, skin-side down. Sear for about 5-7 minutes until golden brown, then flip and cook for another 5 minutes. Remove the chicken and set aside.
  3. In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender, about 5 minutes.
  4. Stir in the cream of chicken soup and capers, mixing well. Return the chicken thighs to the skillet, making sure they are covered with the sauce.
  5. Cover the skillet and reduce the heat to low. Let simmer for 20 minutes, or until the chicken is cooked through and tender.
  6. Serve the creamy chicken mixture over the cooked pasta and garnish with fresh parsley.
