Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 8 ounces mushrooms, sliced (such as cremini or button)
  • 1 cup crème fraîche or plain yogurt
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Juice of 1 lemon

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Season the chicken thighs with salt, pepper, thyme, and oregano.

  7. Once the chicken is done, remove it from the oven and let it rest for a few minutes. Serve the chicken thighs topped with the mushrooms and a generous dollop of the herb yogurt sauce.
