Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining 2 tablespoons of butter. Stir in the minced garlic, thyme, and rosemary, cooking for about 1 minute until fragrant.

  5. Add the white beans and heavy cream, stirring to combine. Allow the sauce to simmer for about 5 minutes, letting it thicken slightly.
  6. Return the chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
  7. Garnish with fresh parsley before serving.
