Ingredients:

  • 2 chicken breasts, boneless and skinless
  • 8 oz pasta (fettuccine or linguine)
  • 1 cup whipping cream
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)
  • 1 teaspoon Italian seasoning

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. In a large skillet, heat olive oil and butter over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it.
  5. Pour in the whipping cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and combined. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  6. Slice the cooked chicken and add it to the sauce. Toss in the cooked pasta and mix until well coated. Adjust seasoning with salt and pepper as needed.
  7. Serve hot, garnished with fresh parsley.
