Creamy Garlic Chicken Thighs with Broccoli and Bacon

Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 cups broccoli florets
  • 1 cup heavy whipping cream
  • 1 cup mozzarella cheese, shredded
  • 4 slices bacon, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the pan.
  3. Season the chicken thighs with salt, pepper, and Italian seasoning. In the same skillet, sear the chicken thighs skin-side down for about 5-7 minutes until golden brown. Flip and cook for another 5 minutes. Remove the chicken and set aside.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy whipping cream and stir to combine. Add the mozzarella cheese and stir until melted and smooth.
  5. Add the broccoli florets to the skillet, stirring to coat them in the creamy sauce. Place the chicken thighs back on top of the broccoli.
  6. Sprinkle the crispy bacon over the chicken and broccoli. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the broccoli is tender.
  7. Remove from the oven and let cool slightly before serving. Enjoy your creamy garlic chicken with a side of the rich sauce!
