Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 8 oz pasta (fettuccine or penne)
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season the chicken thighs with salt, pepper, thyme, and oregano.
  3. Add the chicken thighs, skin-side down, to the skillet. Sear for about 7-8 minutes until golden brown. Flip and cook for an additional 5-6 minutes until cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the sliced onions and cook until caramelized, about 8-10 minutes. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  5. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and let it reduce slightly, about 3-4 minutes.
  6. Return the chicken thighs to the skillet, coating them in the creamy sauce. Add the cooked pasta, tossing to combine and heat through.
  7. Garnish with fresh parsley before serving.
