Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes.
  2. Push the onions to the side of the skillet and add the chicken breasts. Season them with salt, pepper, and thyme. Sear the chicken on both sides until golden brown, about 4-5 minutes per side.
  3. Add the minced garlic to the skillet and cook for 1 minute until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Cover and cook for about 10-15 minutes, or until the chicken is cooked through.
  5. Remove the chicken from the skillet and set aside. Stir in the heavy cream, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes until slightly thickened.
  6. Return the chicken to the skillet, coating it in the creamy garlic sauce. Cook for an additional 2-3 minutes to heat through.
  7. Garnish with fresh parsley before serving.
