Ingredients:

  • 2 chicken breasts
  • 1 head of cauliflower, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, bring salted water to a boil. Add the chopped cauliflower and cook until tender, about 10 minutes. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 6-7 minutes on each side, or until cooked through. Remove from skillet and let rest.
  3. In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant. Add the cooked cauliflower and chicken broth, simmering for another 5 minutes.
  4. Using an immersion blender, blend the cauliflower and broth mixture until smooth. Stir in heavy cream and Parmesan cheese, cooking until heated through. Adjust seasoning with salt and pepper as needed.
  5. Slice the chicken and serve it on a plate, drizzling the creamy cauliflower sauce over the top. Garnish with fresh parsley.
