Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup grape tomatoes, halved
  • 1 cup milk
  • 4 medium potatoes, cubed
  • 1/4 cup all-purpose flour
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cubed potatoes with olive oil, thyme, rosemary, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and tender.
  3. While the potatoes are roasting, season the chicken breasts with salt and pepper. In a large skillet over medium heat, add olive oil and sear the chicken for 5-7 minutes on each side until browned.
  4. Remove the chicken and set aside. In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Sprinkle the flour over the garlic and stir to combine.
  5. Gradually whisk in the milk, stirring constantly until the sauce thickens. Return the chicken to the skillet, coating it with the creamy sauce, and add the halved grape tomatoes.
  6. Cover and simmer for 10-15 minutes until the chicken is cooked through and the tomatoes are soft.
  7. Serve the creamy garlic chicken alongside the roasted herbed potatoes.
