Ingredients:

  • 2 boneless, skinless chicken breasts
  • 4 oz cream cheese, softened
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt, pepper, and Italian herbs. Add to the skillet and cook until golden brown on both sides, about 6-7 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  5. Stir in the softened cream cheese until melted and well combined.
  6. Add fresh spinach and cook until wilted, about 2-3 minutes.
  7. Return the chicken to the skillet, coating it with the creamy sauce. Cook for an additional 2-3 minutes until heated through.
  8. Serve hot, garnished with grated Parmesan cheese.
