Ingredients:

  • 2 cups low carb pasta elbows
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions:

  1. Cook the low carb pasta elbows according to package instructions until al dente. Drain and set aside.
