Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup milk
  • 8 oz mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper.
  2. Add the chicken to the skillet and cook for about 5-7 minutes on each side, or until fully cooked. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic and sliced mushrooms, and cook until the mushrooms are browned and have released their moisture, about 5 minutes.
  5. Stir in the dried thyme, then pour in the milk, scraping up any bits from the bottom of the skillet. Bring to a simmer and let it reduce slightly for about 3-4 minutes.
  6. Return the chicken to the skillet, coating it in the sauce. Let it simmer for an additional 2-3 minutes to ensure the chicken is heated through.
  7. Garnish with fresh parsley before serving.
