Ingredients:

  • 8 oz penne pasta
  • 2 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup chili beans, drained and rinsed
  • 1 cup mushrooms, sliced
  • 1 bell pepper, diced
  • 2 tbsp red curry paste
  • 4 cloves garlic, minced
  • 1 cup grated parmesan cheese
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

  1. Cook the penne pasta according to package instructions in salted water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the sliced mushrooms and diced bell pepper to the skillet. Sauté until softened, about 5 minutes.
  4. Stir in the red curry paste and cook for another minute until well combined.
  5. Add the diced tomatoes and chicken broth to the skillet. Bring to a simmer and let cook for about 5 minutes.
  6. Stir in the chili beans and cooked penne pasta, mixing well to combine all ingredients.
  7. Lower the heat and add the beaten eggs, stirring quickly to create a creamy sauce. Remove from heat.
  8. Finally, stir in the grated parmesan cheese until melted and creamy. Season with salt and pepper to taste.
