Ingredients:

  • 300g pasta (fettuccine or penne)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 200g fresh spinach, roughly chopped
  • 150ml heavy cream
  • 50g grated Parmesan cheese
  • 50g sun-dried tomatoes, chopped
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil leaves, for garnish

Instructions:

  1. 1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving a cup of pasta water.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. 3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. 4. Lower the heat and pour in the heavy cream, stirring to combine. Bring to a gentle simmer.
  5. 5. Stir in the grated Parmesan cheese and chopped sun-dried tomatoes. Mix until the cheese melts and the sauce thickens slightly. If the sauce is too thick, add reserved pasta water, a little at a time, until desired consistency is reached.
  6. 6. Season with salt and black pepper to taste. Add the cooked pasta to the skillet, tossing to coat it evenly with the sauce.
  7. 7. Serve hot, garnished with fresh basil leaves.
