Ingredients:

  • 1 pound gnocchi
  • 4 ounces bacon, diced
  • 8 ounces mushrooms, sliced (such as cremini or button)
  • 1 cup heavy cream
  • 1 cup provolone cheese, shredded
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese, grated (for serving)

Instructions:

  1. 1. In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.
  2. 2. In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.

  4. 4. Add the minced garlic to the mushrooms and cook for an additional minute until fragrant.
  5. 5. Pour in the heavy cream and bring to a gentle simmer. Stir in the provolone cheese until melted and smooth. Season with salt and pepper to taste.
  6. 6. Add the cooked gnocchi and crispy bacon to the sauce, tossing gently to coat. Heat through for a couple of minutes.
  7. 7. Serve hot, garnished with fresh parsley and grated Parmesan cheese.
