Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 can diced green chiles (4 oz)
  • 1 can diced jalapeños (4 oz), drained
  • 1 can diced tomatoes (14.5 oz), drained
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the cream of chicken soup, diced green chiles, diced jalapeños, diced tomatoes, garlic powder, onion powder, cumin, salt, and pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then sear them for about 3-4 minutes on each side until golden brown.
  4. Pour the creamy mixture over the seared chicken breasts, making sure they are well coated.
  5. Sprinkle the shredded cheddar cheese on top of the chicken and sauce mixture.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
  7. Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh cilantro if desired.
