Ingredients:

  • 4 cups of diced potatoes
  • 2 cups of cooked ham, diced
  • 1 cup of heavy cream
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of diced onion
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, boil the diced potatoes in salted water until fork-tender, about 10 minutes. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  4. In a large mixing bowl, combine the cooked potatoes, diced ham, sautéed onion and garlic, heavy cream, thyme, rosemary, salt, and pepper. Mix until well combined.
  5. Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  7. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
