Ingredients:

  • 2 cups diced ham
  • 1 ham bone
  • 4 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups heavy cream
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the diced ham and cook for another 2-3 minutes until slightly browned.
  3. Stir in the potatoes, canned tomatoes (with juices), ham bone, chicken broth, garlic powder, thyme, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the potatoes are tender.
  5. Remove the ham bone and allow it to cool slightly. Shred any remaining ham from the bone and return it to the pot.
  6. Stir in the heavy cream and heat through, ensuring the soup is warm but not boiling.
  7. Taste and adjust the seasoning with additional salt and pepper if needed.
  8. Serve hot, garnished with fresh parsley.
