Ingredients:

  • 1 ham bone
  • 2 cups diced ham
  • 4 medium potatoes, peeled and diced
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, sauté the chopped onion, carrots, and celery over medium heat until softened, about 5-7 minutes.
  2. Add the diced ham and the ham bone to the pot, stirring to combine.
  3. Pour in the chicken or vegetable broth and bring to a simmer.
  4. Add the diced potatoes and drained canned tomatoes, and cook until the potatoes are tender, about 15-20 minutes.
  5. Remove the ham bone, and stir in the heavy cream and ricotta cheese until well combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
