Ingredients:

  • 1 ham bone
  • 2 cups diced ham
  • 4 medium potatoes, peeled and diced
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, combine the ham bone and chicken or vegetable broth. Bring to a boil, then reduce heat and let simmer for about 30 minutes to infuse the flavor.
  2. Remove the ham bone and let it cool slightly. Once cool, shred any remaining ham from the bone and set aside.
  3. In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
  4. Add the diced potatoes and the reserved diced ham to the pot. Pour in the heavy cream and stir to combine.
  5. Add the drained diced tomatoes and return the ham bone to the pot. Season with salt and pepper to taste.
  6. Simmer the soup for another 20-25 minutes, or until the potatoes are tender.
  7. Stir in the ricotta cheese until well incorporated. Remove the ham bone before serving.
  8. Garnish with fresh parsley and serve hot.
