Creamy Herb Chicken Noodle Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 2 cups egg noodles
  • 1 cup heavy cream
  • 1 tablespoon lemon zest
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5 minutes.
  2. Stir in the garlic and cook for another minute until fragrant.
  3. Add the chicken breasts, chicken broth, thyme, rosemary, and bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the chicken is cooked through.
  4. Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
  5. Add the egg noodles and cook for about 8-10 minutes, or until tender.
  6. Stir in the heavy cream and lemon zest, and season with salt and pepper to taste. Heat through.
  7. Serve hot, garnished with fresh parsley.
