Ingredients:

  • 8 oz pasta (fettuccine or your choice)
  • 1 lb ground pork
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  3. Add the ground pork to the skillet, breaking it apart with a wooden spoon. Cook until browned and fully cooked through, about 5-7 minutes.
  4. Stir in the chopped spinach and cook until wilted.
  5. Reduce the heat to low and pour in the heavy cream. Stir to combine, then add the grated Parmesan cheese and mix until melted and smooth.
  6. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency.
  7. Add the cooked pasta to the skillet and toss to coat with the creamy sauce.
  8. Season with salt, pepper, and red pepper flakes if using. Stir in the fresh herbs just before serving.
  9. Serve hot, garnished with additional Parmesan cheese and herbs if desired.
