Ingredients:

  • 2 cups canned hominy, drained and rinsed
  • 1 cup mushrooms, sliced (such as cremini or button)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and lightly browned, about 5-7 minutes.
  4. In a large bowl, combine the drained hominy, sautéed mushrooms, heavy cream, cheddar cheese, Parmesan cheese, thyme, paprika, salt, and pepper. Mix well to combine.
  5. Transfer the mixture into a greased baking dish, spreading it evenly.
  6. Bake in the preheated oven for 25-30 minutes, until the top is golden and bubbly.
  7. Remove from the oven and let it cool slightly. Garnish with fresh parsley before serving.
