Ingredients:

  • 200g pasta (spaghetti or fettuccine)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 teaspoon rose harissa
  • 1 lemon (zest and juice)
  • 100g cheddar cheese, grated
  • 2 tablespoons mayonnaise
  • Salt and pepper, to taste
  • Fresh basil, for garnish
  • Chili oil, for drizzling
  • 1 tablespoon sesame oil
  • 2 tablespoons chopped parsley

Instructions:

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Add the rose harissa and cook for 1 minute, stirring to combine.
  5. Pour in the reserved pasta water and lemon juice, then bring to a simmer.
  6. Add the drained pasta to the skillet, along with the grated cheddar and mayonnaise. Toss everything together until the cheese is melted and the pasta is coated. Adjust the consistency with more pasta water if needed.
  7. Season with salt, pepper, and lemon zest. Remove from heat.
  8. Drizzle with sesame oil and chili oil before serving.
  9. Garnish with fresh basil and parsley.
