Creamy Lemon Garlic Pasta with Spicy Harissa & Cheddar

Ingredients:

  • 200g pasta (spaghetti or your choice)
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 lime, juiced
  • 2 tbsp Laoganma chili oil
  • 100g cheddar cheese, grated
  • 2 tbsp rose harissa
  • 2 tbsp mayonnaise
  • 1 ripe avocado, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup panko breadcrumbs
  • Fresh basil and parsley for garnish

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the cooked pasta to the skillet along with the lemon juice, lime juice, lemon zest, Laoganma chili oil, and rose harissa. Toss to combine well.
  5. Stir in the grated cheddar cheese and mayonnaise, mixing until creamy and well-coated. Season with salt and pepper to taste.
  6. Gently fold in the diced avocado.
  7. In a separate pan, toast the panko breadcrumbs over medium heat until golden brown.
  8. Serve the pasta in bowls, topped with toasted panko breadcrumbs and garnished with fresh basil and parsley.
