Ingredients:

  • 4 pounds elbow macaroni
  • 4 cups sharp cheddar cheese, shredded
  • 2 cups mozzarella cheese, shredded
  • 2 cups Gruyère cheese, shredded
  • 1 cup cream cheese, softened
  • 8 cups whole milk
  • 1 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, bring salted water to a boil. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes until golden.
  4. Gradually whisk in the milk, continuing to stir until the mixture thickens and bubbles.
  5. Add the cream cheese, cheddar, mozzarella, Gruyère, Dijon mustard, garlic powder, onion powder, salt, and pepper. Stir until the cheeses are melted and the sauce is creamy.
  6. Combine the cooked macaroni with the cheese sauce, ensuring all pasta is well coated.
  7. In a separate bowl, mix the breadcrumbs with the Parmesan cheese and parsley.
  8. Transfer the macaroni and cheese to a large baking dish. Sprinkle the breadcrumb mixture evenly over the top.
  9. Bake in the preheated oven for 25-30 minutes, or until the top is golden and crispy.
