Ingredients:

  • 8 oz pasta (penne or fusilli)
  • 1 cup mock crab meat
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 medium onion, chopped
  • 1 cup mushrooms, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sliced mushrooms, and sauté until they are softened and golden, about 5-7 minutes.
  4. In a large mixing bowl, combine the cooked pasta, mock crab meat, cream of mushroom soup, sautéed onions and mushrooms, garlic powder, paprika, salt, and pepper. Mix well until all ingredients are evenly combined.
  5. Transfer the mixture to a greased baking dish. Sprinkle the shredded cheese evenly over the top.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool slightly. Garnish with fresh parsley before serving.
