Ingredients:

  • 8 oz. pasta (fettuccine or penne)
  • 2 boneless, skinless chicken breasts
  • 1 cup fresh asparagus, trimmed and cut into 2-inch pieces
  • 1 cup mozzarella cheese, shredded
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • Fresh basil, for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Add to the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and slice into strips.
  3. In the same skillet, add minced garlic and asparagus. Sauté for 2-3 minutes until the asparagus is tender but still crisp.
  4. Pour in the heavy cream and bring to a simmer. Stir in the mozzarella cheese until melted and the sauce is creamy.
  5. Add the cooked pasta and sliced chicken to the skillet, tossing everything together until well combined. Adjust seasoning with salt and pepper if needed.
  6. Serve hot, garnished with fresh basil if desired.
