Creamy Mushroom and Bacon Bake

Ingredients:

  • 200g double cream
  • 4 large eggs
  • 150g bacon, diced
  • 50g grated Parmesan cheese
  • 4 slices of crusty bread
  • 200g mushrooms, sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet over medium heat, cook the diced bacon until crispy. Remove and set aside.
  3. In the same skillet, add the sliced mushrooms and minced garlic. Sauté until the mushrooms are golden and tender. Season with salt and pepper.
  4. In a mixing bowl, whisk together the double cream and eggs until well combined. Stir in the cooked bacon and sautéed mushrooms.
  5. Grease a baking dish and pour the cream mixture into it. Sprinkle the grated Parmesan cheese on top.
  6. Bake in the preheated oven for 25-30 minutes or until the mixture is set and golden on top.
  7. While the bake is cooking, toast the bread slices until golden brown and spread with a little butter.
  8. Once the bake is done, serve warm on a slice of toasted garlic bread, garnished with fresh parsley if desired.
