Ingredients:

  • 8 oz fettuccine pasta
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are browned and have released their moisture, about 7-8 minutes.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  5. Pour in the heavy cream and stir to combine. Bring to a gentle simmer, then add the grated Parmesan cheese, nutmeg, salt, and pepper. Stir until the cheese is melted and the sauce is creamy.
  6. Add the cooked fettuccine to the skillet and toss until well coated in the sauce. Heat through for about 2 minutes.
  7. Serve immediately, garnished with fresh parsley.
